Baking soda has had a moment as a produce wash. Tip-of-the-tongue answer when anyone asks how to clean pesticides off fruit, all over social media, even quoted in mainstream cooking columns. It's cheap, it's already in the cupboard, and the science behind it is real — sort of. The honest answer is: yes, baking soda can remove some pesticide residues, but only under very specific conditions that most people aren't following.
Here's what the research actually shows, where baking soda falls short, and what to do if you want produce that's genuinely cleaner — not just rinsed.
What the research actually says
The study everyone cites is from the University of Massachusetts in 2017, led by food scientist Dr Lili He. Her team compared three washing methods on apples treated with two common pesticides — thiabendazole (a fungicide) and phosmet (an insecticide).
The results: a baking soda solution (one teaspoon of baking soda per two cups of water) was significantly better at removing surface pesticide residues than plain water or a commercial bleach wash. So far so good. But there's a catch buried in the methodology: the apples had to soak for 12 to 15 minutes to get those results. A quick splash, swirl, and rinse wasn't enough.
There's another caveat. The study only tested two pesticide compounds. There are more than 400 active pesticide ingredients registered for use in Australia alone, and they behave very differently in water and at alkaline pH. The Massachusetts result is a real finding — it just doesn't generalise as broadly as the headlines suggest.
Why a quick rinse doesn't cut it
The reason baking soda works at all comes down to chemistry. Sodium bicarbonate is mildly alkaline, and many pesticides are organic compounds that slowly hydrolyse — break apart at their molecular bonds — when exposed to an alkaline environment. The key word there is slowly. The reaction takes time.
In the Massachusetts study, the researchers measured how much pesticide remained on the surface at intervals. After two minutes of soaking, the difference between baking soda water and plain water was small. After eight minutes, the gap widened. By twelve to fifteen minutes, the baking soda solution had stripped most of the surface residue. Stop the soak early and you cut the chemistry off mid-reaction.
That's the catch with most kitchen advice that says "rinse with baking soda water." A 30-second rinse over the sink does very little. To get the result the research promises, you need a soak — and to soak something for fifteen minutes, you need a clean bowl, you need to remember it's there, and you need to be okay with what happens to the fruit during that time. What baking soda doesn't touch
Even a proper 15-minute baking soda soak only addresses a slice of the contamination picture. There are three big blind spots worth knowing about.
Systemic pesticides. Many modern pesticides are designed to be absorbed through the roots or leaves and distributed throughout the plant tissue. Neonicotinoids are the best-known example. They're not sitting on the skin of the fruit; they're inside it. No surface wash — baking soda, vinegar, branded produce washes, none — can remove what's already in the flesh.
Waxes and binders. A lot of commercial produce is coated in food-grade wax (sometimes to extend shelf life, sometimes to seal in moisture) which can lock pesticide residues against the skin. Baking soda doesn't dissolve those waxes. The residue stays underneath.
Crevices and seed pockets. Strawberries, raspberries, broccoli florets — anything with deep crevices or hollow seed cavities holds onto residues mechanically. A still soak doesn't reach into those pockets. You need some agitation, and even then, certain fruits will hold what's in them.
The fruit damage problem
Soaking delicate produce in any solution for fifteen minutes comes at a cost. Strawberries soften and start to leak. Raspberries fall apart. Leafy greens go limp.
